Fights Obesity

One of the anthocyanins in purple corn is identified as cyanidin 3-O-beta-D-glucoside. Researchers at Doshisha University in Japan examined the effects of cyanidin against obesity and diabetes. They divided mice into two groups, one group fed a high fat diet and one fed a high fat diet plus purple corn cyanidin, for 12 weeks. The results of their study, published in the July 2003 issue of "Journal of Nutrition," show that the mice fed the high fat diet alone experienced an increase in blood sugar, circulating insulin, inflammation and an increase in size and number of fat cells. The group of mice that consumed the purple corn cyanidin did not experience these negative changes. Researchers conclude that the purple corn supplementation is useful in preventing obesity and improving diabetes.

Fights Inflammation

Inflammation in the body can cause neuropathy, which the National Institute of Neurological Disorders and Strokes defines as damage to the nervous system resulting in failure of the nerve endings' ability to send messages back to the brain regarding pain and other sensations. Diabetic neuropathy is common in those with high blood sugar. Researchers at Hallym University in Korea examined the action of purple corn anthocyanins on cells associated with diabetic inflammation. The results of their study, published in the May 2, 2011 issue of "The Journal of Nutritional Biochemistry," show that purple corn anthocyanins reduced inflammation in the cells, suggesting that it may protect against diabetic neuropathy.

Reduces Blood Pressure

Untreated high blood pressure can lead to kidney damage, heart disease, memory loss, vision loss and stroke, according to the American Heart Association. The 2007 issue of the "Journal of Nutritional Science and Vitaminology" reports that purple corn anthocyanins lowered blood pressure and heart rate in hypertensive rats.
